Le Puy En Velay

Le Puy en Velay, prefecture of the Haute Loire department has 22,000 inhabitants and is one of the departure points for the pilgrimage route to Santiago de Compostella. The town also gave its name to the green lentils eaten all over France with the traditional “petit salé” ham - “la lentille verte de Puy”.
